The gas used for artificial ripening of green fruit is ethylene. Ethylene is a hydrocarbon which has the formula C 2H 4 or H₂C=CH₂. It is a colorless flammable gas with a faint "sweet and musky" odor when pure. It is the simplest alkene, and the second simplest unsaturated hydrocarbon after acetylene. Ethylene is also a small hydrocarbon gas. It is naturally occurring, but it can also occur as a result of combustion and other processes. You can't see or smell it. Some fruit will produce ethylene as ripening begins.
